There was tons of marine life to see there - and since the crater's floor was relatively close to the surface where we were snorkeling, we had a great view of the coral below as well. I think you are right on about even folks who aren't great swimmers being able to snorkel here - wearing a life-jacket as you suggest will allow them enjoy snorkeling here in relative safety. The water at Molokini was really calm when we were here, which would be that much better for less experienced swimmers! I'd also suggest renting a wetsuit if your tour operator provides them - we found that it didn't cost much, and kept us much more warm and comfortable as we snorkeled!
